Trellis Bay Market Bar & Grill began as a humble provisioning store and gift shop, founded by Ephraim Penn, his wife Marva Penn, and Andrew Gordon. As Trellis Bay continued to grow—especially with the expansion of the Terrence B. Lettsome International Airport—so did the demand for flavorful meals and ice-cold beverages right on the beachfront.

Seeing the opportunity, the Penn family moved swiftly, transforming the mini-market into a lively kitchen serving crowd favorites like Chicken Roti, Wings, and a hearty Caribbean-inspired breakfast. Before long, it became affectionately known as the “Roti Shop”, earning a reputation for serving the Best Roti in the Caribbean, as recognized by Caribbean Compass Magazine.

As the appetite for fresh, locally inspired food continued to grow, the Roti Shop expanded its offerings to include Jerk and BBQ, along with a full international breakfast, lunch, and dinner menu. By 2011, Trellis Bay Market Bar & Grill had firmly established itself as a must-visit destination. Following Hurricanes Irma and Maria, our clientele grew even more, drawn by resilience, community, and great food shared by the bay.

Today, the business has come full circle as the next generation—Sharoma Penn and Shamora Penn-Maduro—adds new energy and experiences to the legacy.
